Laksa Soft Bread

Been awhile since I last baked, still recovering from my sprained ankle.

But hey, my hands can still move right, hehehe!

Chanced upon another contest by Prima Taste, so decided to try my luck and make this Breakfast Favourite of mine! I urge my readers to try it, is simple yet super delicious:

#MyPrimaTaste

Laksa Soft Bread Loaf

A:
125g Bread Flour
125g Water
¼ tsp instant Yeast

Mix all ingredients in a big container (tall enough for it to rise) till a wet paste, cover and leave it overnight.

B:
300g Bread Flour
60g Cake Flour
25g Milk Powder
60g Sugar
5g Salt
2 tsp Instant Yeast
1 Egg

Mix all ingredients in your mixer bowl.

C:
1 Full Pack of Prima Taste Laksa Fried Rice Sauce
80g Coconut Milk

Heat up both Laksa Fried Rice Sauce and Coconut Milk in saucepan over low fire stove. Leave it to cool before using.

D:
55g Unsalted Butter (cut into smaller pieces)

1) Preheat your oven (top and bottom heat, with fan) at 180’C.
2) Combine A and B in your mixer bowl, knead the dough at low speed with your kitchen machine (using dough attachment).
3) Add in C, continue to knead the dough at low speed till no longer crumbly.
4) Add In D pieces by pieces, and continue to knead the dough at low speed, till it passes window panel test.
5) Transfer the dough into a greased bowl, cover it and leave it to proof for an hour.
6) Once proof, puncture the dough and shape it as desired.
7) Place your shaped dough in baking tin, leave it to proof for another hour.
8) Brush the top with melted butter and bake it for 20 to 25 mins.
9) Remove bread from oven, leave it to cool before serving.
10) Store in airtight container after cooling.
